Bodacious Bulgar Breakfast (or anytime!) Biscuits Recipe

My son is a bit of a picky eater – not fussy – just knows what he likes and what he doesn’t like. And it’s not even that it’s very limited, it’s just — hmmm, not always very versatile. He kind of likes things plain. Not crazy about sauces or casseroles – likes his foods by themselves and rather plain.

Breakfast is one of the harder meals of the day. Not a cereal eater, not crazy about pancakes or waffles…..he’ll eat lunch foods for breakfast – and that’s fine. But I’m always trying to come up with something new for him to eat. For some reason I want him to have some variety and I guess I like a challenge. So despite everything I know about him – I decided to try some fortified biscuits.

I started with leftover bulgar which I added to a standard bisquick recipe for biscuits

I also added some freshly chopped parsley

Then in went the milk

Stir to get it started…….

Then I added chopped red onion, chopped ham, and cheese (all I had was yellow american – please no insults!)

And dropped by large spoonfuls onto my favorite stone. (this is my favorite stone because of the built in handles – makes it so easy to handle!)

I originally had these in more of a ball shape but I decided to flatten slightly and add just the slightest curl of butter. Cuz, you know, well, it’s biscuits. and its butter. ‘nough said.

Cooked until golden brown.

And we looked and tasted. And it was good.

There was some batter left so I decided to add some feta and green pepper.

And left them rounded and no butter.

And they were light and fluffy and every bit as good. 🙂

I ate two of them.

 

ok ok! It was three. But it was all for the sake of science – taste testing – health of my boy and all at stake ya know.

So the outcome is I now have a new favorite go-to biscuit and while my son ate one and a half – he declared them ‘good’ but that’s it.

So I’m still searching for breakfast ideas.

Bodacious Bulgar Breakfast Biscuits

  • 2  1/4 c Bisquick
  • 2/3 c milk
  • 1/2 c cooked bulgar (I would use more next time, it was hardly detectable)
  • Your additions:
    cheese, ham, onion, whatever you like!

Bake at about 400 until they are golden brown. Remove from oven and enjoy! These should freeze well.
